2019 Blanc de Blancs Methode Traditionelle
Our first-ever traditional method sparkling wine is here! 100% estate grown Chardonnay was grown using biointensive practices. The base wine was fermented in tank and transferred to bottle for the secondary fermentation in June 2020. Fermented in the bottle and rested on the lees for 12 months, it is fresh and vibrant with alluring toasty notes. 2019 was an ideal vintage for making sparkling wine due to the high acid in the grapes from cool weather.
The first disgorgement of 55 cases was August 6, 2021. 125 total cases were produced; the remaining cases will be disgorged in later years.
Serving Notes: Chill well before serving. Open over the sink in case of excess mousse. Pour gently to avoid foaming.
